Hence the quotation marks around the word rice in the title.
It’s cauliflower rice – like cauliflower florets blended until they become like the texture and size of rice. Have you tried this yet? It’s seriously amazing. Especially if you are trying to watch your carbs, or if you want to get a good, detoxifying meal. Like, ahem, the one I’m posting right now.

So let’s talk about how to make some super good cauliflower rice. Because, well, it’s pretty easy to make some awesome cauliflower rice in a matter of minutes.
You start by coarsely chopping up the cauliflower. This recipe calls for a whole one. (Oh yeah, and don’t forget to remove the stem!) Once you have your large cauliflower florets, place them in a blender. Fill up the blender with water – just enough to cover up the cauliflower. And then pulse a few times until the the cauliflower looks like rice.
After that you are going to dump the mixture into a mesh strainer. Use a spoon to press the water from the cauliflower pieces until no water remains. And there you have it – easy cauliflower rice!

Chopping up the veggies take just a minute and the dressing isn’t much work either.
In fact, the dressing can be made in the blender right after the cauliflower is all drained. It’s made with some great detoxifying ingredients – ginger root, honey, cilantro, garlic, lime juice, olive oil, and vinegar.
And the dressing is the perfect complement to all the flavors going on – these matches were definitely made in heaven.

However, you can definitely nix any of the above and add in some other flavors if desired. Totally customizable and make it so you like it.
Detoxing should be fun. Or, er, at least not totally miserable. Right? Detoxing with this summer fruit and veggie rice bowl is anything but painful. It’s filled with flavor, good nutrients, and will make your body feel invigorated!

DETOX FRUIT & VEGGIE "RICE" BOWL

Ingredients
  • 1 fresh cauliflower
  • 1 large mango
  • 1 cup black beans
  • 1 cup corn
  • 1/2 cup red pepper
  • 1 large avocado
Dressing
  • 1 tablespoon + 1 teaspoon fresh lime juice
  • 2 teaspoons honey
  • 1 teaspoon balsamic vinegar
  • 1 and 1/2 tablespoons cilantro, packed
  • 2 and 1/2 tablespoons extra virgin olive oil
  • 1/4 teaspoon minced garlic
  • 1/4 teaspoon minced ginger root, optional

Instructions
  1. Remove the stems from the cauliflower. Chop into large florets and place in a blender. Fill the blender with water to cover the cauliflower and pulse until the cauliflower resembles rice.
  2. Transfer into a mesh strainer and use a spoon to press the water out of the cauliflower. Transfer cauliflower (completely water-free) into a large bowl.
  3. Remove the skins and pit of a mango. Chop and add into the bowl. One large mango will produce about a cup of fruit.
  4. Drain and rinse black beans and corn. Add to the bowl.
  5. Remove the stems and seeds from a red bell pepper. Chop into small pieces and add into the bowl.
  6. Remove the skins and pit of an avocado. Chop and add to the bowl.
  7. Lightly toss the ingredients together.
  8. For the dressing, make sure to measure the cilantro AFTER being chopped and tightly packed into the measuring spoons.
  9. In a blender or food processor, combine all of the dressing ingredients. Blend until combined. Pour the dressing over the salad and toss lightly until combined.
  10. Refrigerate any leftovers.
